When November arrives, we harvest at the perfect moment of maturity when the olives turn from green to violet, sacrificing quantity for the highest concentration of polyphenols and flavor.
To ensure low acidity and maximum freshness, our olives are pressed within 24 hours of harvest. Our continuous cycle machinery keeps the temperature strictly below 28°C, extracting the oil without water or solvents — preserving the natural antioxidants and the distinct, authentic flavor of Valmi.

Once extracted, the oil is stored in stainless steel tanks shielded from light and oxygen to maintain peak freshness. We allow it to settle naturally before bottling. Our dark glass bottles are chosen specifically to block UV light — ensuring that when you open a bottle of Valmi, it tastes exactly as fresh as the day it was pressed.
